Primavera de 1991

Con paso ligero, el padre Giuseppe Baldi dejó atrás la plaza de San Marcos con las últimas luces del día.

Como de costumbre, caminó en dirección a la orilla de los Schiavonidonde tomó el primer vaporetto con destino a San Giorgio Maggiore. Laisla que aparece en todas las postales de Venecia fue en otro tiempo propiedad de su orden y el viejo sacerdote siempre la contemplaba connostalgia. Las cosas estaban cambiando muy deprisa. Todo parecía sujetoa mutación en aquellos tiempos inestables. Incluso una fe, la suya, quecasi tenía dos mil años de historia a sus espaldas.

Baldi consultó su reloj de pulsera, aflojó el último botón de su hábito y, mientras buscaba un asiento libre junto a la ventana, aprovechó para limpiar los cristales de sus diminutas gafas de alambre.

Sin dejar de recitar su letanía, el padre admiró el crepúsculo al tiempo que echaba un discreto vistazo a su alrededor.

«Todo en orden», pensó.

El vaporetto, el familiar autobús acuático blanco de los venecianos,estaba casi vacío a esa hora. Sólo una pareja de japoneses y tresbecarios de la Fundación Giorgio Cini a los que Baldi conocía de vista, parecían interesados en su servicio.

«¿Por qué seguía haciendo aquello?», se preguntó. «¿Por qué seguía mirando de reojo a lospasajeros del barco de las seis, como si fuera a descubrir entre ellos las cámaras de un periodista? ¿No llevaba ya suficientes años refugiado en la isla, a salvo de todos ellos?»

Catorce minutos más tarde, su transporte lo apeó en un feo embarcadero de hormigón. Al abrirse la compuerta, el bofetón de aire frío los despabiló a todos. Ninguno le prestó atención al bajar.

En el fondo, Baldi adoraba que su vida en la isla fuera tan tranquila. Cuando llegara a su celda se asearía, se cambiaría de calzado, cenaría con la comunidad y se encerraría a leer o a corregir algunos exámenes pendientes. Había seguido aquel rito desde su llegada a la abadía diecinueve años atrás. Diecinueve años de paz,cierto. Pero siempre en guardia, a la espera de una llamada, una carta o una visita indiscreta. Esa era su condena. La clase de carga que jamás se quitaría de encima.

Pero Baldi se esforzaba por no caer en la obsesión.

¿Existía una vida más placentera que la entregada al estudio? El buen religioso no albergaba dudas al respecto. Sus ocupaciones en el conservatorio Benedetto Marcello como profesor de prepolifonía leproporcionaban la calma que jamás conoció en su juventud. Sus alumnos eran aplicados. Acudían a sus clases con moderado entusiasmo y él les explicaba cómo era la música anterior al año mil, salpicando sus lecciones con curiosas anécdotas. El claustro de profesoreslo admiraba, incluso cuando dejaba de impartir sus clases abstraído en alguna investigación. Y los estudiantes lo respetaban. En consecuencia, sus horarios habían terminado por convertirse en los más flexibles del centro. Y sus lecciones, las más solicitadas.

Pero tantas facilidades nunca lograron distraerlo de sus otros intereses. Eran tan discretos y antiguos que rara vez hablaba de ellos con nadie.

Baldi llegó a la isla de San Giorgio en 1972, exiliado por culpa de la música. Allí, la Fundación Cini le ofreció más de lo que se hubiera atrevido a pedir a su obispo: una de las mejores bibliotecas de Europa, un centro de convenciones que había sido varias veces sede de conferencias de la UNESCO, y dos institutos consagrados a la música veneciana y a la etnomusicología que lo embriagaron. Hasta cierto punto era lógico que los benedictinos hubieran creado aquel paraíso para musicólogos en San Giorgio. ¿Quién si no los hermanos de la Ordo Sancti Benedicti podrían ocuparse con tanta devoción de tan antiguo arte? ¿Acaso no fue el propio San Benito quien, al fundar su Orden en el siglo VI, sentó las bases de la moderna ciencia musical?

Baldi era un experto en la materia. Él, por ejemplo, fue el primero en darse cuenta de que la regla de San Benito, la única que obligaba a ocho servicios religiosos diarios, se basaba por entero en la música. Era un secreto fascinante. De hecho, cada uno de los «modos» que todavía hoy se emplean en la composición de las melodías musicales había inspirado las oraciones que sus hermanos recitaban adiario. Baldi demostró que la oración de maitines (la de las 2 de lamadrugada, en invierno) se correspondía con la nota do. Que los laudes, al amanecer, equivalían a re. Los oficios de la hora primera, la tercia y la sexta -- las 6, 9 y 12 de la mañana -- a mi, fa y sol. Que la hora de mayor luz, la nona, a las 3 de la tarde, «sonaba» como la, y las vísperas, a la puesta del sol, como si.

Esa era la clase de lecciones que lo habían hecho famoso. «¡Horas y notas están relacionadas!» -- decía con vehemencia a sus alumnos -- . «¡Rezar y componer son actividadesparalelas! ¡La música es el verdadero lenguaje de Dios!»

Pero el veterano Baldi guardaba más hallazgos bajo los hábitos. Sus tesis eran deslumbrantes. Creía, por ejemplo, que los antiguos no sólo conocían la armonía y la aplicaban matemáticamente a su música, sino que ésta era capaz de provocar estados alterados de conciencia que permitían a sacerdotes e iniciados del mundo clásico acceder a parcelas «superiores» de la realidad. Su idea polemizó durante décadas con otras que defendían que esas sensaciones de elevación espiritual siempre se consiguieron gracias a drogas alucinógenas, hongos sagrados o substancias psicotrópicas.

¿Y cómo usaban la música? Baldi lo explicaba cuando laconversación se animaba. Admitía que a los sabios del pasado les bastaba desarrollar una sintonía mental adecuada para recibir información del «más allá». Decía que en ese estado, brujos y místicos podían revivir cualquier momento del pasado, por remoto que fuera. Dicho de otro modo, según él, la música modulaba la frecuencia de las ondas del cerebro y estimulaba centros de percepción capaces de navegar en el tiempo.

«Pero ese conocimiento -- explicaba resignado -- se perdió.»

Muchos cuestionaban las ideas vanguardistas del padre Baldi. Sin embargo, las polémicas jamás avinagraron su rostro jovial y amigable. Su melena de plata, su porte atlético y su mirada franca le conferían un halo de conquistador irresistible. Casi nadie reparaba nunca en sus sesenta y cinco años. De hecho, de no haber sido por su voto de castidad, Baldi habría roto los corazones de muchas alumnas. Y los de sus madres.

Aquel día, ajeno a lo que estaba a punto de sucederle, Baldi entró en su residencia con la sonrisa y la prisa de siempre. Apenas se fijó en que el hermano Roberto le esperaba en la puerta con cara de querer decirle algo.

It made me relax and enjoy

I really enjoyed reading this book. At first one of the characters annoyed me, but once I kept reading she became higher on my list. I think that any woman who reads this book will be able to compare themselves to at least one of the characters. At first I was just like one of the characters Mel, but then soon realized I was a little of each one.

This book is a great story of 3 woman who are going through crazy times in their lives and all the obsticles they go through. I really enjoyed how one chapter was about a certain character and once that chapter was over you had to wait until 2 chapters later because the author took turns for each character. That was very smart, made you just not want to put the book down. Don't be fooled by the back of the book saying about 3 woman who go to a spa, that is not till the end and it doesn't make the whole story. The whole book is great at knowing the characters and everything they are going through, not a day at the spa. Read it and you will just feel like you are in another world wanting to help each character.

Hot Tub!

I usually am very fond of girlygirl books like this, especially if the women in question have British accents. And this book wasn't horrible, but it is not a paradigm of the genre either. It took me a while to even get engaged in the story: it starts out from the perspective of supermom Mel who is overwhelmed by being a mother and a fulltime employee, and then moves on to the similarly disinteresting Daisy, a supposedly plain and chubby girl who managed to capture the hottie crew captain in college. Things picked up a bit when the author started in on Cleo, which may simply be because she is a younger character and her plotline was just less depressing. The owner of the spa, which miraculously brings them all together but not until the very end of the book, was a really irritating character to me--an all-knowing and mystical American who somehow solved all these women's problems with a trip to the hot tub. She shares how her life was changed when she went to a spa in Arizona run by--of course--a Native American with the name of, wait for it, Sequoia. Yea, that about sums it up. The problems faced by these women were so smugly and easily solved, it was just unsatisfying.

Don't base your decision entirely on the other review.

You know, I read the other review of this book and it angered me a little. This book is a memoir written by a woman who was subjected to torture and treatment that nearly all reading this will never have to endure. Look at the title of the book, of course it is going to be depressing. She was the victim and this is HER memior, she never claimed to be a writer. It took her twenty years to write this book because of how difficult the whole ordeal was. In writing this book she became physically ill with all the same ailments that she suffered while imprisoned. Please do not let that review make your decision. I had the opportunity to hear her on NPR and I was very impressed with her.

One of the Best Books I've Read This summer

The term good would not do justice to my opinions of this book. This is not to say that I agree with all of the author's opinions on all matters, but this well-written account of faith, suffering, and the price of totalitarianism is on the whole superb. Marina is thankfully a talented written and usully manages to keep even the more mundane aspects of growing up in Iran during the Shah's reign interesting. Essentially the story of her arrest, imprisonment, interrogation (with torture in at least one instance), near execution, and an essentially forced relationship with a guard is alternated with her childhood and experience of the 1979 Revolution. The interrogator Ali Moosavi is a fascinating character in the book. In some ways he is one of the most sinister characters but deep down he has numerous good qualities. Marina confesses that she very understandably still doesn't know how to feel for this man who combined ruthlessness with idealism. From one angle he cruelly convinced her to temporarily betray her Christian faith and slept with her against her will. On the other side he twice saved her life including the second time as his final actions on earth. He seemed to have the potential to change right at the moment when he himself became the victim of the regime he had once suffered and fought for
(he not only fought the Iraqis but had himself been tortured earlier by the Shah's men). Despite all the pain and suffering from totalitarianism and war, Nemat herself retains a dignified humility and care for other human beings and thankfully does have a relatively happy ending in the book by emmigrating to Canada with her husband and children. The book also features an interview with the author that is rather interesting. If there is one criticism of the book it is that I wish the author had focused more on the return to her Christian faith and how her experiences had worked to shape her beliefs. This is discussed some but I felt there may have been so much more which could have been contemplated here.

overall, i highly recommend the book.

P.S.
This work does bring up a number of issues. First of all Marina Nemat was faced with criticism from a number of former political prisoners about some details of the book. I can't of course know every single detail in the work was accurate; the author herself admits that time has obscurred some details. It is also worth mentioning that other former iranian political prisoners responded to the attacks by supporting Nemat.

on a larger scale the book should bring to mind three important realities.

1. Political oppression and torture still occurs in Iran though argueably not to the level as under Khomenini (less mass executions anyway).
2. Christian minorities (and other religious minorities) suffer oppression and persecution in vast swathes of the Middle East. This often violent persecution in of course not limited to iran but also includes U.S. allies such as Saudi Arabia which is in truth even worse than the Iranians in some respects.
3. There are a surprising number of torture victims living in the West from a whole range of countries. Before writing the book, Nemat worked at a Swiss Chalet restaurant and was living a middle class Canadian life with her husband and children. In short, this reality should give us some pause about the possible experiences of others we may run into. Sometimes it is the most seemingly normal of people who have lived through the nightmare of totalitarianism (whether religious or atheistic or neither).

A Sad But Riveting Glimpse into the Real Iran

Marina Nemat's memoir of her experience inside Tehran's notorious Evin prison is a well written and riveting account of one woman's brutal treatment at the hands of a brutal regime. The work presents the reader with a number of moral quandaries when confronted with some decisions Marina made during her imprisonment. Were her choices truly good, evil or morally neutral? What else could she do given her dire circumstances? What would you do if you were in her place? To reveal them here would be to spoil a good read, so I will leave them for you to discover. What this work did for me was to humanize the people of Iran. Often enough, when Americans think of Iran and Iranians, we imagine a collective group of fanatics shouting, "Death to America! Death to Israel!" but Marina's book paints a different portrait. Yes, there are plenty of fanatics in Iran, but then there are mostly ordinary people, like Marina's father who ran his own dance studio before the Islamic Revolution ruled that dancing was forbidden. There is tender first love among Iranian teens; a passionate sense of justice by ordinary Iranian students, often with little regard for their own security. There is Marina's chain-smoking and impatient mother; the complex character of Ali, torn by his personal feelings for Marina and his sense of duty to Islamic justice; Andre, the church organist whose enduring love offers Marina hope in the midst of her despair. These are real people with the same aspirations to live their lives in peace and security, just like any human being. For Christians, one can discern the hand of God in Marina's life and throughout her imprisonment. The various events that lead her from the dark terror of Evin to freedom in the West is nothing less than providential. After reading Marina's story, I gained a fresh sense of appreciation and gratitude for the democratic freedoms Americans take for granted. When one considers that a man and woman may not even hold hands in public in Iran, it places many of our social problems in a stark perspective. This work is sure to move, inspire, anger, sadden, and outrage you, but it is also about the triumph of faith and the human spirit in the face of tyranny and intolerance.

What an enjoyable read! Unlike the all-too-typical angst-ridden star autobiography, George Hamilton (with collaborator William Stadiem) delivers the goods in the same breezy, self-effacing and irreverant tone that has kept his career afloat for nearly fifty years while most of his similarly pretty-faced contemporaries have long drifted out of public memory. Who cares if most people would be hard pressed to name three of his films? What a raconteur!

Impossible to know if this is the real Hamilton but this frequently LOL page-turner expertly maintains the sly persona (sort of a cross between Cary Grant. . . and Seventies-era Burt Reynolds, but with class) he has honed over the years, pulling no punches (yep, there's plenty of dirt--his take on working with Lana Turner is hilarious) yet without ever coming across as mean-spirited.

To avoid sounding like a shill reviewer from someone in the star's (or ghost writer's) camp, I will point out one major flaw: The book is too damn short!

I want to go out to lunch with this guy and hear about the stuff he doesn't even bother to mention. Hell, I'll even spring for the tanning butter!

Georgian Elegance

I only bought George Hamilton's memoir, DON'T MIND IF IF I DO, because I had finished Tony Curtis' new memoir and I was shocked at how distasteful Tony seemed. I was curious, then, to compare his report with a report by one of his cohorts, though Hamilton is about 15 years younger than Curtis.

I knew next to nothing about George Hamilton when I started this book, other than that during those times I had seen him on television, he had appeared to be clever and charming, self-deprecating and funny. It turns out that Hamilton is all of these things and more.

Though he never complains, he has had a sad life, albeit in a very luxurious way. His mother was so involved in her own hedonistic pleasures that George and his brother David barely managed to get conventional educations; George never even graduated from high school.

Yet his mother connived to live in America's finest communities, including Beverly Hills, Beacon Hill in Boston, Beekman Place and Fifth Avenue in Manhattan and, most of all, Palm Beach. Being raised in these environments of privileged entitlement gave George an outlook that can only be termed exotic.

George sounds, amazingly, like a loving and unquestioning son. As soon as he was able, he took over the support of his mother and his older half-brother. He views his life with humor and his family with obvious affection, though he probably would have been better served to have hidden from them and not left a forwarding address.

Most of his life has been a series of near-misses, from his romance with Lynda Bird Johnson (which, even all of these years later, still strikes a chord of implausibility) to his single attempt at marriage. Yet he examines all of his adventures with acceptance and good humor.

This is not a typical Hollywood biography, in that it is not as peopled with movie stars as it might have been if he had had a larger career. At the same time, it is filled with folks with whom mere movie stars don't get to hobnob: English nobility, dethroned royalty, Arab gunrunners, Southern gentlemen, Mafia dons, everyday billionaires, leading American military men, Presidents (plural) and Senators, best-selling authors, society bandleaders, Asian dictators....

There is a whole other memoir in what George, ever the gentleman, chooses not to reveal. He doesn't kiss and tell, and he has kissed some very famous women. One can draw any conclusion one wishes.

All in all, George Hamilton has led quite a life.

The pacing of this book is not as tight as it could be and the flow of the narrative often is choppy. In the early pages, where his collaborator is first catching on to his rhythm, the tone is strained. George's father barely is mentioned after the details of his parents' divorce, other than for his death, and there is a brother who is mentioned even less. While there probably was a surfeit of material from which to choose, these faults lie with his co-writer, rather than with George.

George seems to be a man whose generosity of spirit and loving attitudes add up to a genuinely nice person--a genuinely nice person who has led a distinctive and fascinating existence. His story is well worth reading.

A Pleasant Surprise

I approached George Hamilton's book "Don't Mind If I Do" with some trepidation. Whenever his name came up, it only invoked images of a glossy, golden, sun-baked man - not a real person at all.

In his autobiography, George tackles that part of his image honestly. In a chatty, friendly way, Mr. Hamilton shows the reader his past and what really happened. He does not deny the popular delusion of his spending half his waking hours basking on some beach. In fact, he readily admits to his sun-worshipping habits. What does surprise me, more than his honesty, is the wealth of movies he did appear in and his association with the entertainment and political world. From Robert Evans to President Johnson's daughter, George Hamilton met (and partied) with them all. He talks of his successes (Love At First Bite) and his string of failures (The Happy Hooker Goes To Washington).

His relationships with the women in his life (and, although legion, he does not kiss-and-tell) is told. Surprisingly, he gives quite a brutal assessment of his family. His recollections on the life, and passing, of his brother are quite touching.

It all makes for a fast, and sometimes quite funny, read.

Introduction

The Moosewood Collective has written a dozen cookbooks filled with recipes for flavorful, interesting vegetarian food from soups to desserts. We've covered quick and easy meals and cooking for celebrations. One of our books is about the world of ethnic cuisines; another teaches you how to cook from your own kitchen garden. Many of our early recipes are loaded with cheese, and one of our most popular cookbooks is all about low-fat fare. Sometimes we think we've said everything we have to say, but then we find new ingredients, new cuisines, and new information, and ultimately we find we have new perspectives. Today we want freshness and integrity of ingredients. Our food must be attractive and delicious, but we also want it to contribute to good health. Really, we want it all.

We read and hear a lot about nutrition. We are bombarded with information on food, and the media definition of healthful food changes from week to week. Bits of nutritional information can be blown out of proportion, taken out of context, or viewed in isolation without considering the complexity of interactions in the body. Sometimes studies are poorly interpreted in the media. Too much of what we learn comes from advertising. Sometimes it seems that we receive more nutritional advice (and some of it contradictory) than we can process.

However, science continues to advance. New and better findings supplant the old, and nutritional recommendations change. So we are careful to heed only the advice of reputable sources, and we deliberate and then proceed with caution before changing our eating habits or making recommendations of our own.

One thing we know is that the surest source of nutritious and delicious food is your own kitchen. And we've noticed that all the experts we trust agree on a few things: eat more plant foods -- fruits, vegetables, beans, whole grains, nuts and seeds; avoid processed foods, refined sugars and carbohydrates, additives and preservatives; cut back on fats, especially trans fats and saturated fats. Many essential vitamins, minerals, and other phytonutrients are found abundantly -- sometimes exclusively -- in the plant world, and most people will be healthier longer if they pack their diets with plant foods. Well, that's what we're good at. Moosewood has been focused on making delicious vegetarian whole foods for years.

Judging by our customers' questions and requests, and by scanning the magazine covers while waiting in the supermarket checkout line, we think our health concerns are probably similar to yours: achieving wellness, enhancing fitness, maintaining a healthy weight, and managing chronic illness with a conscious diet.

Most people are aware of the role food plays in good health -- the five-a-day message has been heard -- yet it is believed that fewer than a third of Americans come close to this goal. Newer guidelines from the National Cancer Institute call for seven servings of fruit and vegetables a day for women and nine a day for men. Oldways recommends twelve servings of antioxidant-rich foods a day. It seems that although we acknowledge the nourishing and healing powers of plant foods, most of us still need help getting enough vegetables and fruits into our diets to enjoy these positive effects.

There are a number of things we've kept in mind while creating recipes for this book. First of all, we want to cook with real, whole, natural foods, and we want to avoid processed and refined ingredients. So we started with the basics: whole grains rather than refined grains; olive oil instead of the "bad" fats; sweetness from the fruits and vegetables themselves; and lots and lots of dark green, red, orange, yellow, purple, and blue. We've included refined carbohydrates and sugars in scant amounts only or not at all, and we've completely avoided the "white foods": white bread, white pasta, white rice, and white potatoes. Not all fruits and vegetables are created equal, it turns out; some are phytonutrient superstars. So we looked for new ways to use blueberries, sweet potatoes, kale, seaweed, cherries, nuts, and pomegranates.

Then we looked at cooking techniques. We played with all of the methods the kitchen has to offer -- steaming, sautéing, roasting, baking, braising, grilling, boiling, simmering, and stewing -- to come up with healthier ways to prepare some of our old favorites. Healthier not only in terms of our bodies, but also better for the environment. For example, we've baked tofu in the oven for years. That's fine when it's cold out and the heat from the oven helps warm the house or when the oven is on anyway for some other dish. But what about when it's hot out and the house needs to be cooled down, not heated up? In this book, we have several recipes for stove-top tofu, like Pomegranate-glazed Tofu, that cook more quickly over direct heat, using less energy.

We also explored some of the intriguing ways to prepare raw "living" food dishes, such as Winter Squash "Rice Mexicali"; and we came up with more healthful but still satisfying ways to attain certain qualities. For example, we thickened creamy Watercress and Cauliflower Soup with cauliflower rather than potatoes or a flour-and-fat roux, and we made a delicious Sweet Potato Pie lighter by whipping the egg whites and using buttermilk.

Another way to make a dish more healthful is to reverse the usual proportions of ingredients, adding more vegetables than usual and maybe less cheese or eggs. For example, we've been making our Pasta with Broccoli for a long time but it has evolved over the years; now it probably ought to be called Broccoli with Pasta. The pasta is whole wheat and there's just enough olive oil and cheese to make it flavorful with a good mouth feel.

It also occurred to us to boost the nutrition in some dishes by tucking in a couple of little extras not strictly necessary in the recipe. For instance, our Breakfast Muffins are made with whole wheat flour, oat bran, and fruits, and are further enhanced with a little wheat germ or flaxseeds. For more protein, we added edamame (fresh green soybeans) to a classic stir-fry of noodles with vegetables and tofu and called it Three-Soy Sauté with Soba.

Our primary inspiration all along at Moosewood Restaurant has been ethnic grainbased cuisines that are low in saturated fats and high in plant foods. The traditional bean and corn dishes of Latin America, vegetable stews of West Africa, and tofu and vegetable sautés of Asia are all brimming with nutritious vegetables. Sometimes we adjust these dishes to accommodate ingredients that are close at hand, and sometimes we tinker with the traditional recipes and cooking methods to make them vegetarian, quicker, easier, lower in fat, or just plain tastier. Our fascination with both traditional ethnic foods and the multicultural synthesis of eclectic dishes is represented in foods as diverse as Quinoa Tabouli, New World Pizza, Thai Red Curry, Tempeh Bourgignon, and Mushroom Barley "Risotto."

We've included information we came upon in answering our own questions: Why are whole grains so much better than refined ones? What are phytonutrients? Which fats and oils are more nutritionally beneficial? Shouldn't our interest in healthful eating go beyond what's on the plate to the relationships among food, sustainable farming practices, and the environment? Is it more important to choose organic food or locally grown food?

Quality Cookbook, Tasty Recipes

Admittedly, when I see "Healthy" as a description in a cookbook's title, I get a bit skittish. My head thinks healthy is wonderful, but my palate sometimes disagrees. Moosewood Restaurant Cooking for Health has exceeded all expectations and does not sacrifice taste for health. It's has opened up a new world of delicious and yes, quite healthy, food for me and my family.

Cooking for Health has loads of nutritional information at the beginning of the book. It's followed by cooking methods, then the recipes. It's your typical all-around cookbook with chapters on: Breakfast, Eggs, Appetizers, Salads, Soups, Sandwiches, Burgers, Stir-frys & Sautes, Tofu, Savory Pastries, Beans, Pasta, Stews, Veganism, Raw Foods, Grains, Side Veggies and Desserts.

I cook a lot, and own a selection of quality cookbooks. After buying this cookbook and making some of the recipes, I now use this as my Go-To cookbook. I've made the Savory Asparagus and Mushroom Bread Pudding, Pasta with Broccoli and Thai Red Curry. They all came out so delicious, my husband and I loved them. The Asparagus and Mushroom bread pudding was only 222 calories per serving too! It certainly didn't taste like a low calorie dish, and I can't wait to make it again.

My favorite things about the Moosewood Restaurant Cooking for Health are the "extras" given for each recipe. They describe each recipe at the beginning, plus give variations, helpful suggestions, and serving ideas. The serving ideas can be food-related, or enhance the visual presentation.

This is the kind of cookbook you can take to bed and read, or just start cooking with. The ingredient lists are not overly lenghty, nor are the instructions for cooking. Every recipe lists "Hands-on Time" and "Baking Time" so you know how long a recipe takes and can plan accordingly.

Each recipe has a nutritional breakdown consisting of Calories, Protein, Carbohydrate, Dietary Fiber, Total Fat, Saturated Fat, Monounsaturated Fat, Cholesterol and Sodium. Also listed is the total number of servings, plus the volume yield, so you can easily dole out proper portion servings if you're watching your weight.

The cookbook has vegetarian, vegan and raw selections to choose from. They also give variations on some vegetarian recipes to make them vegan. (But if you're vegan, you often know how to adjust recipes your own way too.) The recipes also come with "Serving and Menu ideas" which can be suggestions on food pairings, or adjusting a lighter meal to make it heartier.

The one change I'd like to see with any Moosewood cookbook is photos. I understand that Moosewood likes to keep their style, but I'm one of those people who loves photos of food.

Excellent collection of healthy recipes

Over the years, cookbooks from the Moosewood Collective have evolved quite a bit. I'm already the happy owner of a few (definitely get Sundays at Moosewood to expand your cultural cooking repetoire). This new cookbook is quite large and packed not only with very healthy recipes, but loads of information on the foods in that chapter. Some of the information is a bit pedestrian, but it seems to be targeted at folks who might be new to vegetarian or healthy-eating lifestyles.

What I really like about this cookbook goes beyond the recipes (and I'll get to that next). The layout, often forgotten by cookbook publishers, is an important part about using cookbooks. Moosewood Restaurant Cooking for Health goes a very long way toward making cooking easier for its readers. The ingredients are set aside in a pleasingly shaded box and the ingredients themselves are bolded. These are important elements for folks who may have the book resting in another part of kitchen while cooking and have to run back and forth to the book to see what comes next.

Importantly, the ingredients are presented in the order in which they are used. Don't laugh! Some books forget about this and make it hard for cooks to deal. Also, very important, most of the recipes are very simple, and the directions are limited to one side of an open spread. I find that very useful. One of the design flaws that bugs me the most is running the recipe to a turned page (especially during a portion of the recipe that requires care).

The recipe pages also include the very handy nutritional information (calories, serving size, fat, etc.). Additionally, swap-outs and other recipe suggestions are included.

OK, now for the recipe info. I tried out the Apple-Blueberry Crumble on page 316. It is very easy to make, and I even added pumpkin and sesame seeds to the crumble topping to customize it. It came out perfectly, and didn't take longer than the projected baking/hands-on times listed at the top of the recipe (another great feature of the book).

I'm looking forward to working my way through the recipes as I have done with other Moosewood books. I recommend it for new and experienced healthy eaters interesested in changing up some classics as well as learning a wide variety of new recipes.

A great whole-foods-based cookbook, nice vegan selection

Having been vegan for several years and vegetarian before that, it may come as a surprise that this was my first Moosewood cookbook. I knew when I ordered it that there would likely be many recipes that called for cheese, eggs, etc., but I hoped there would at least be enough of a vegan presence that I could keep this cookbook in my "go to" section. I was not disappointed: about 70% of the cookbook is either straight-up vegan or veganized with minimal effort. At this point, even though I've made only 10 recipes (I normally like to make 15-20% of a cookbook's repertoire before writing a review), I believe I've gotten an accurate sample and a feel for tone of the cookbook. As I meander through the rest of it, making two or three recipes from it each week, I will update this review if my general impression changes.

I follow a whole-foods approach to cooking and eating, with lots of fresh veggies, whole grains, legumes, and other natural proteins (tofu and tempeh). This particular Moosewood iteration, Cooking for Health, is a great fit for me because it is entirely whole foods-based and very healthy. There are no faux meats or heavy cheese sauces, but there are tons of veggies, which I love. I feel great eating the recipes out of this cookbook and never have to compromise on nutritive quality, because it incorporates foods that I already eat in ways that are inspired, wholesome, and delectable. The recipes let the true flavors of the food shine through while being complimented -- not overpowered -- by spices, herbs, and aromatics. Additionally, many of the recipes in this cookbook take 30-35 minutes, with most clocking in at an hour or less.

Here are the recipes I've made:

1. Greek Lentil Burgers: Good. Relatively easy to make, yet somewhat bland-tasting when the recipe is followed exactly. This recipe actually calls for eggs as a binding agent, but we used Ener-G egg replacer. As my husband, who is also vegan, and I were making these burgers, he didn't like the flavor until we added some Bragg's and vegan Worcestershire sauce to the mix. Might make again.
2. Tempeh-Quinoa Burgers: Wow, excellent. Easy to make, great tasting, super healthy, and filling. Cooked sweet potatoes are used as the binder, so this recipe is straight-up vegan. Would make again.
3. Broccoli Rabe with Beans: Very good. I loved this one! So simple and quick, yet so flavorful and nutritious. Would make again.
4. Spanikopita: Bland, but with lots of potential; tasted better the next day as leftovers. Surprisingly easy to make, although time-consuming because of all the prep work. This recipe incorporates TONS of greens (two bunches each of kale and spinach), which we loved. We subbed one block of extra firm tofu for the crumbled neufchatel/feta cheese the recipe calls for. Will probably make again but will add more tofu (two blocks) and some Bragg's to the greens before wrapping them up in the phyllo dough.
5. Mushroom, Peanut, Tofu Stew with Greens: Very good; hearty and flavorful. Thick enough to be used as a "curry" and served over rice. Both hubz and I enjoyed this one with no changes to the recipe. Would make again.
6. Deconstructed Japanese Lunchbox Salad: Excellent. This dish was surprisingly filling, considering it's basically salad greens, brown rice, tofu, and some veggies. We liked this recipe with no alterations. Would make again.
7. Latin Corn Soup: Slightly eccentric but very good. Another hearty and flavorful dish with tons of veggies. We ate this with no changes to the recipe. Might make again.
8. Adzuki Bean and Spinach Soup: Average. Kind of plain; better once we added some Bragg's and cracked pepper. Probably would not make again.
9. Greek Tomato-Yogurt Soup: Very good. We easily substituted soy yogurt (instead of dairy) and used fresh tomatoes instead of canned. I also added a few avocado chunks for color, although the recipe doesn't call for it. I really enjoyed this soup, but hubz didn't like it so much; said it reminded him of gazpacho (which I love and he dislikes). Would make this again for myself.
10. Italian Lentils: Amazing. This dish is so hearty and delicious, and it can feed 8 people (or more) if you serve it with a grain (we like it with millet). We have since made this dish three more times, changing the recipe only to add zucchini.

Organization

This cookbook is huge: 300 pages of recipes, not including the introduction or the index (350 pages total). It's arranged in a typical way, beginning with breakfast and baked goods (none of which are vegan except for the Vegan Cornbread), eggs, appetizers, salads, and soups. It then moves into more main-dish chapters like burgers, stir-fries, casseroles, beans, and pasta. Finishing the cookbook are chapters on side vegetables and then desserts. About 70% of the desserts are straight-up vegan.

Strangely, there is a separate chapter on stews that was placed a full 130 pages past the soup chapter. Maybe this is standard cookbook organization, but I found it inconvenient that soups and stews were not even placed in chapters adjacent to each other. If I'm in the mood for soup, I would also be interested in stews and would love to find them all in one go. Personal preference, I guess!

There are brief commentaries throughout the book that discuss the glycemic index, fats and oils, phytonutrients, antioxidants, seaweed, legumes, veganism, raw foods, sugars, etc. These vignettes would be most informative for the beginning vegetarian or whole foods cook; and while I found them interesting, there wasn't a whole lot I didn't already know.

Other than the placement of the stews chapter, my only other gripe with this cookbook is the lack of labeling. The vegan recipes aren't labeled as such in the table of contents, in the index, or on the recipe pages themselves. This likely won't be a problem for non-vegans; but if Moosewood had had the foresight to simply add the letter "V" (or "V option") to denote vegan (option) recipes, it would have saved me, and doubtless many other vegan readers, tons of time.

So exactly how vegan is this cookbook?

Roughly 60% of the book's recipes are straight-up vegan, with absolutely no substitutions or omitting of any ingredients. Another 10% of the recipes call for dairy ingredients but are veganized with minimal effort without drastically changing the flavor or nutrient profile of the dish -- like subbing for milk, butter, or mayonnaise, or omitting a negligible amount of shredded cheese as garnish. These two categories (vegan and easily veganized) are what I consider, for my own purposes, to be "usable" recipes, and they make up about 70% of the book.

Another 15% of the recipes have dairy ingredients that would take more effort to substitute, like eggs in baked goods (should I use flax? banana? Ener-G?). And finally, another 15% of the recipes call for dairy ingredients that, if omitted or subbed, would drastically change the flavor of a dish or render it totally unrecognizable. These two types of recipes are in my "throw away" category, when subbing is just not worth it. Luckily, vegans will still get about 140 usable recipes out of this cookbook -- not too shabby. However, had I not gotten this cookbook through the Vine program, I don't honestly think that I would purchase it. (Why would I, when I could just buy one of the hundreds of amazing vegan cookbooks already out there and not have to worry about substitutions?)

So, in short, although vegans may prefer to stick to strictly vegan cookbooks, I think that this Moosewood iteration would be a great resource for those who enjoy a whole foods-based, vegetarian cooking style and are looking for a huge collection of healthy recipes.

Slow Paced but worth it!

Omar gave me another one that I can honestly say that I was a fan of. The Last Street Novel captivated me with just the title. This tale of an author's life on the streets of New York City was like watching a thriller on the big screen. It sex, gun violence, street fights, gangs, and backstabbing friends.

Shareef, Spoony and the gang thought it was gonna be another weekend with the boys until Shareef goes to hear a book idea from an inmate up state. Shareef later discovers that the guys he's thought was his friends for more then 20 years, were really the ones out to take his life without even knowing what his conversation was about with the inmate. It takes a minute to get to the thick of things, but its worth the wait.

This was my 1st book by Omar Tyree. Maybe I am to old for this "urban fiction".
I had to really force myself to finish this book. The characters were like something out of the twilight zone..I have never read such conversations between people. There was never much point to anything. The main character Shariff was arrogant, not to bright, and really not much of a writer? Well, Mr. Tyree is a best selling author. New York Times, so I read. How he ever got there with this type of stuff is beyond me. I am very happy I did not pay for this book. Great book cover, but please people select something else. A big snore fest.
